Applesauce Pancakes

INSTRUCTIONS:

In a large bowl combine the dry pancake ingredients (flour, sugar, baking powder, cinnamon, and salt). Next in a separate bowl combine the pancake wet ingredients (applesauce, vanilla, almond milk, and egg). 

Mix the dry pancake ingredients into the wet ingredients until a batter has formed. If the batter is too thick add a little more almond milk. 

(NOTE: The batter should be slightly thicker than normal pancake batter.)  

Next for the apple topping, in a pot on medium heat add 2 tbsp of butter. Once the butter is melted add the diced apples. Once the apples begin to cook, add the remaining ingredients. Reduce until the apples are softened then keep warm until you are ready to serve. 

In a large non-stick pan greased with a little butter, pour or scoop 1/4 cup of batter for each pancake. Wait until bubbles form to flip. Continue cooking for an additional minute to cook through, and brown on the other side.

Now you are ready to serve the pancakes on a large plate the top with the apple topping.
