BBQ Chicken jalapeño Poppers

An excellent appetizer for your next party.



BBQ Sauce Ingredients:


Preheat the oven to 425 degrees Fahrenheit.

In a large pan on medium heat, add all the bbq sauce ingredients. Bring to a simmer and reduce until thickened. Season to taste with salt and pepper then set aside to cool.

In a large pan on medium heat, cook the bacon until crisp, then chop up the bacon nice and fine and set aside.

Wash and rinse the jalapeños. Slice each jalapeño in half lengthwise and scoop out the seeds and flesh. Lay the jalapeño halves on a baking sheet lined with parchment paper.

Next in a large pan on medium high heat, add some oil and the diced red onion. Sauté till translucent then add the ground chicken. Brown and cook the chicken and season with salt and pepper. Set aside to cool.

In a large bowl: Add the cooled chicken mixture, cream cheese, cheddar cheese, mozzarella cheese, finely chopped bacon, and a little bbq sauce. Mix until completely combined then fill each jalapeño half with the filling.

Bake in the oven for around 20 minutes or until the cheese has browned on the top and the jalapeños are soft.

Now you are ready to serve it up. Drizzle some bbq sauce on top and garnish with chopped cilantro.
