Berry Tiramisu

Berry Simple Syrup Ingredients:

In a medium size sauce pan on medium/low heat, add the berry simple syrup ingredients the let reduce for about 10 minutes. Cool completely and set aside. Wash the berries and cut the strawberries into quarters. Next in a stand mixer or large bowl with a hand mixer, add the heavy cream, vanilla, and 1/4 cup of sugar. Whip the cream on high speed for a few minutes or until stiffed peaks have formed then fold in the softened mascarpone cheese. Now in a 9×9 casserole dish add a layer of the lady fingers to the bottom of the casserole and add 1-2 ladles of the berry simple syrup. Next add a layer of fresh berries followed by a layer of whipped cream. Repeat the process laying the lady fingers in the opposite direction of the 1st layer and until all of the ingredients are used. Refrigerate for 3-4 hours or you can go 2 hours in the freezer to set up. Cut into portions and serve. Enjoy!
