Brownie Cookies

Imagine getting the corner of the brownie in every bite. Now make these cookies.

~15-24 cookies (depending on how big you make them)

In a large bowl start by combining the dry ingredients: flour, cocoa powder, baking powder, and salt. Whisk until combined and set aside.

Next in a separate large bowl using a hand mixer or you can use a stand mixer. Add the butter, brown sugar, and granulated sugar. Mix until the butter and sugar is combined then add the eggs and vanilla extract. Continue to mix until a batter has formed.

Now there are 2 ways you can melt the chocolate. The best way is the double boiler method:

Take a medium size pot and fill it 1/2 way with water. Bring to a gentle simmer. Place a stainless steel or large glass mixing bowl on top of the pot (make sure the bowl is larger then the pot and the water does not boil over). Add the 8 oz of chocolate to the bowl and continuously stir for a few minutes until the chocolate is completely melted.

(NOTE: make sure no water or steam gets into the chocolate or else the chocolate will not melt correctly and you will have to start over with a new batch of chocolate.)

The 2nd method is to place the chocolate in a microwave safe bowl and microwave in 20-30 second intervals. Between each interval stir the chocolate for 30 seconds before microwaving again. Repeat the process until the chocolate is melted.

(NOTE: if you try this method, do not rush it the chocolate can burn very easily in the microwave. Take your time and go slow.)

Let the chocolate cool so it does not cook the eggs.

Now while continuous mixing add the melted chocolate and once incorporated add the dry ingredients a little at a time until a batter has formed. Mix the batter for 2 minutes.

Lastly, fold in the chocolate chips and let the batter hang out in the fridge for 20 minutes.

While the batter chills, preheat the oven to 350F.

Roll the brownie cookie batter into 1-1.5 Tbsp balls and place on a baking sheet lined with parchment paper 2-3 inches apart.

Bake in the oven for 12 minutes or until the edges of the cookies set.

Let the cookies cool on a wire rack before serving.
