Pesto Ingredients:

Instructions: Caprese Chicken!

Preheat the oven to 350F.

To make the balsamic reduction: In a small saucepan on medium/low heat, add 1/2 cup of balsamic vinegar. Reduce by 1/2 or until thickened. Keep warm until you are ready to use.

Next for the pesto: In a small dry pan on low heat, add the pine nuts and toast for a few minutes until you begin to smell them. Make sure to keep them moving in the pan so they do not burn, then set aside.

Now in a food processor or blender: Add all the pesto ingredients except the olive oil and parmesan cheese. Begin blending the ingredients while slowly adding in the olive oil.

Once the pesto is smooth, add to a large bowl then add in the parmesan cheese. Give everything a mix to combine then season to taste with salt and pepper. Set aside.

Next, season the chicken with salt and pepper on both sides.

In a 12 inch oven safe fry pan on medium heat, add some avocado oil and once the oil is hot add the chicken. Let the chicken sear for about 3 minutes on one side then give them a flip and add the provolone cheese and tomato on top of the chicken. Season the tomato with just a little salt.

Place the pan in the oven and bake the chicken for about 7 minutes or until the chicken is cooked to 155-165F Internally.
