Caprese Flatbreads

Fresh flavors and easy assembly, makes a great meal option for warmer weather.

To make the balsamic reduction, In a small sauce pan on medium low heat, add the balsamic vinegar and a little sugar. Reduce for about 20 minutes or until thickened. It will resemble a thin syrup consistency. Let cool and set aside. To make the humus, Rinse the chick peas and remove the skins. In a food processor add the chick peas, garlic, tahini, olive oil, cumin, the juice of 1.5 lemons, a splash of ice water, salt and pepper. Purée until smooth adding a little more ice water if needed. Taste and adjust the seasoning to your liking. Next to make the caprese salad, in a large bowl, combine all the flatbread ingredients (except the flatbreads) and toss until combined. Now take your flatbreads and spread a generous amount of hummus on the bottom followed by some of the caprese salad then drizzle as much of the balsamic as you like on top. Enjoy!
