Chicken Adobo

Super easy weeknight mill to mix things up!

Season the chicken lightly with salt on both sides. 

In a braising vessel on medium/high heat, add a little vegetable oil. Once the oil is hot add the chicken skin side down. Sear for around 7 minutes on the skin side and 3 minutes on the bone side. Remove the chicken from the pot and set aside. 

In the same pot, reduce the heat to medium. Add the garlic, ground pepper, and whole peppercorns. Fry for 1 minute or until the garlic is fragrant then add both vinegars, brown sugar, and both soy sauces, bring to a simmer then add the bay leaves, water, and chicken back to the pot skin side up. 

Cover the pot with a lid and let the chicken simmer on medium/low heat for 35 minutes. After the 35 minutes, flip the chicken and cook for another 25 minutes. The sauce should reduce and thicken ever so slightly then finish with finely chopped green onions. 

Serve with jasmine rice and a veggie of your choice on the side.
