Chicken Flautas

You can make these baked or fried, either way their an easy dish thats loaded with flavor.

Serves 4





Preheat the oven to 350F.

Combine all the guacamole ingredients in a large bowl and season to taste with salt and pepper. Cover with plastic wrap and place in the fridge until you are ready to serve. Prep and remaining ingredients and set aside.

Next season the chicken breasts with a little oil, garlic powder, onion powder, chili powder, cumin, salt and pepper.

Place the chicken on a baking sheet and bake the chicken in the oven for about 25 minutes or until the chicken is cooked to 165F internally. Let the chicken cool sightly then shred or chop up fine and set aside.

Lay out the flour tortillas on your work surface. Add some of the shredded chicken, diced green chile, cheddar cheese, and jack cheese to the tortillas. Roll up the tortillas and secure closed with 2-3 tooth picks. Repeat the process with the rest of your flautas.

Next in a deep fryer or cast iron pan filled no more than 1/2 way up with vegetable oil. Heat the oil to 350F. Fry the flautas for about 2 minutes per side or until nice and golden brown and crispy. Drain on paper towels to remove the excess oil and season with a little salt then remove the toothpicks. Repeat the process with the rest of the flautas.

(NOTE: For a no fry option, preheat your oven to 400F and bake in the oven for 12-15 minutes or until the tortillas are nice and golden brown and the cheese has melted.)

Serve the chicken flautas on a large plate or platter with some sour cream, guacamole, diced tomatoes, shredded lettuce, cotija cheese on top, and lime wedges.
