Chicken Tikka Masala

My take on chicken tikka masala.

Place all the chicken marinade ingredients in a large bowl and let marinade for 1 hour then place the chicken pieces on skewers and grill until cooked through then set aside.

(NOTE: You do not have to grill the chicken but it ads a nice slight smokey flavor).

Next in a large pan on medium heat, add the grape seed oil, cumin seeds, and mustard seeds. Once the seeds start to sputter add the onion. Season the onions with a little salt and once they begin to caramelize add the red chili powder, turmeric, coriander powder, ginger garlic paste, and green chili. Fry for 30 seconds or until the ginger garlic paste is nice and fragrant then add the tomatoes. Season the tomatoes with a little salt and pepper and let cook until they have reduced down.

Now add the tomato puree, a little sugar, and lemon juice. Bring to a simmer for about 3-5 minutes then add in the grilled chicken, heavy cream, butter, and fresh coriander. Season with garam masala, salt, and pepper to taste. Once the chicken is heated through, it’s done.
