INSTRUCTIONS: Chicken Wings W/ Coconut Curry Sauce

Preheat the oven to 375F on convection bake (400F if your oven does not have convection).

Cut the chicken wings and place them in a large bowl. Season with avocado oil, salt, pepper, garlic powder, onion powder, and paprika. Give them a toss till the seasonings are evenly combined on the chicken wings, then place the wings on a baking sheet lined with foil on top of a wire rack for air flow.

Bake in the oven for 20 minutes then give the wings a flip and let them cook for another 20 minutes or so or until they are done to your desired crispiness.

While the wings cook, In a 10 inch pan on medium heat, add a little oil and once the oil is hot add the shallots and season with salt and pepper. Once the shallots turn translucent add the garlic and chili relish. Fry for about 1 minute or until the garlic is nice and fragrant then add the white wine. Let the wine reduce completely or at least by 1/2 then add the coconut milk. Reduce the heat to a simmer and let reduce until the sauce is thick enough to coat the back of a spoon (about 10 minutes or so).

Now add the lime juice, green onion, and fresh coriander to the sauce. Give everything a mix until combined then season to taste with salt. Set the sauce aside to cool slightly.

Once the wings are done you can either toss the wings in the sauce or serve the sauce on the side as a dipping sauce.
