Chili Garlic Noodles

The BEST chili garlic noodles.

In a medium to large bowl, to velvet the chicken which will make it super tender, add all the chicken marinade ingredients and mix until combined. Let marinade for at least 15 minutes. Next bring 6 quarts of water to a boil then add in the rice stick noodles. Turn off the heat and let them sit in the hot water for about 3 minutes or until softened. Drain the noodles and set aside. (NOTE: The noodles will cook the rest of the way when you stir fry). Now in a large wok or pan on medium/high heat, add the avocado oil and once the oil is shimmering add the marinaded chicken. Cook the chicken until it’s about 50% of the way done then add the shallots, garlic, and ginger. Give that all a toss and continue to stir fry for about 1 minute or until the garlic is nice and fragrant then push all the ingredients to the top of the wok. Add in the soy sauce, chili oil, sriracha, rice wine vinegar, sesame oil, and optional shaoxing wine directly to the side of the wok so that they make contact and simmer immediately (this will add a nice caramelized flavor). Toss everything together until evenly combined then thicken with a little corn starch slurry if needed. Next add in the rice stick noodles, continue to toss and stir fry until all the ingredients are evenly combined then finish with green onion. Enjoy!
