Coconut Lime Mahi Mahi

So easy and so good.

Preheat the oven to 350F.

Lay the mahi mahi filets on a baking sheet lined with parchment paper and make sure to remove any bones from the fish. Season with avocado oil,  salt, and pepper.

Bake in the oven for 6-8 minutes or until the fish is done. 

While the fish bakes, In a medium size pan on medium heat, add 2 Tbsp of avocado oil. Once the oil starts to shimmer add the mustard seeds. Once the mustard seeds start to sputter, add the green onion whites. Season with a little salt and fry for 3 minutes. Next add ginger, garlic, tomatoes, green chili, turmeric, coriander powder, and red chili powder. Cook for 5 minutes then add the coconut milk. Stir and let reduce by 1/2 or until thickened. 

Now add the Pataks chili relish to taste (if using), season with salt and pepper then add finely chopped green onion, coriander, and the lime juice. Give one final stir and its done.

Serve the mahi mahi on top of the rice and asparagus, add some sauce on top of the fish then garnish with more chopped coriander, green onion, and a lime wedge.
