Creamy Gnocchi With Burrata

A flavorful weeknight meal that’s ready in minutes.

Serves 4

Bring 6 quarts of water to a boil and season the water with salt.

While the water comes to a boil, in a large pan on medium heat, add the olive oil and once the oil is shimmering add the shallots. Season the shallots with a little salt and pepper. Once the shallots begin to turn translucent add in the garlic and red chili flake.

Sauté for about 30 seconds or until the garlic is nice and fragrant then add the tomatoes. Season the tomatoes with salt and pepper and let cook for about 7 minutes or until they soften and release their juices. Now add the heavy cream, give it a stir and let simmer for 3 minutes.

Boil the gnocchi to the instructions on the package (usually 4-5 minutes)

Once the gnocchi is cooked, add to the pan and toss in the sauce.

Finish with dollops of the burrata spread evenly in the pan and a bunch of fresh basil on top.
