Easy Pastrami Sandwich

An EPIC lunch option.



Coleslaw Ingredients:

Slaw Dressing:


In a large bowl combine all the coleslaw ingredients and season to taste with salt and pepper. Place the coleslaw in the fridge for at least 1 hour to let marinate. This will help soften the cabbage. 

Next, bake the french fries in the oven to the package instructions. (“Ore-ida fast food fries” are my go to for this recipe).

 Slice the Italian bread and optionally toast with a little butter. Assemble the sandwich with some optional thousand island dressing on the bottom piece of toasted Italian bread followed by a generous amount of pastrami. Top the sandwich with provolone cheese, fries, coleslaw, and sliced tomatoes. (Make sure you season the tomatoes with a pinch of salt and pepper). Add more thousand island dressing to the toasted top slice of Italian bread if you choose, and crown your sandwich.
