Egg Roll In A Bowl

Spicy Mayo Ingredients:


In a small bowl mix together the spicy mayo ingredients and set aside. 

Next in a large wok or pan on medium/high heat, add about 1 Tbsp of avocado oil and the chicken. Season the chicken with a little salt and pepper. Cook the chicken until 90% of the way done then remove from the wok.

Scramble the eggs in a small bowl then in the same wok turn the heat down to medium and add another tbsp of oil. Add the eggs to the hot wok then scramble and set aside. 

Next, clean out the wok making sure there is no egg bits left. Add a little more avocado oil and the diced onion. Once the onions begin to caramelize slightly add the coleslaw mix. Season with just a little salt and pepper and stir fry until the cabbage begins to soften. 

Now add the chicken and eggs back to the wok and toss to combine. Next add the coconut aminos, rice wine vinegar, and sesame oil. Toss until all the ingredients are coated in the sauce and the chicken is cooked through. 

Serve in a bowl with some spicy mayo drizzled on top then garnish with green onion and sesame seeds.
