Elote Corn Dip

This party app is a great option for Cinco de Mayo!

Grill the ears of corn over a charcoal grill until slightly charred all over (Note: If you don’t have a grill, boil the corn for 2-3 minutes).

Let the corn cool slightly then cut the kernels off the cob with a sharp knife and place the corn kernels in a large bowl and set aside.

Next in a large pan on medium heat, add the butter and once melted add the red onion. Once the onions begin to sweat add the diced jalapeño. Continue to Sauté until the jalapeños begin to soften then add the garlic, chili powder, cumin, oregano, paprika, cayenne pepper, salt and pepper. Give that a mix until combined for about 30 seconds or until the garlic is fragrant then turn off the heat and let cool.

Now to the large bowl with the grilled corn kernels, add the seasoned and sautéed onions and jalapeños, mayonnaise, sour cream, cream cheese, cotija cheese, green onion, cilantro, and lime juice. Give that all a mix until evenly combined then taste it and adjust the seasoning to your liking.

Serve with tortilla chips on the side.
