Firecracker Chicken

In a large bowl combine the chicken, soy sauce, sesame oil, sugar, and pepper. Give that a mix and let marinade for 20 minutes. (Right before you are ready to fry the chicken add the flour and cornstarch to the bowl and give it a mix). 

Next in a large pan on medium heat, combine all the sauce ingredients, reduce for 5-10 minutes then thicken slightly with the cornstarch slurry. Set aside. 

In a deep fryer or Dutch oven filled no more than 1/2 way up with vegetable oil, heat the oil to 350 degrees Fahrenheit. Fry the chicken in batches for 4-6 minutes per batch or until the internal temperature of the chicken is 165 degrees Fahrenheit and golden brown. Drain the fried chicken on a wire rack and immediately season with salt. 

Next in a large pan or wok on medium high heat, add a little oil and the ginger, garlic, chili’s, and green onion. Stir fry for 1 minute then add the sauce. Once the sauce starts to caramelize, add the fried chicken and toss in the sauce. 

Now you are ready to serve with jasmine rice and garnish with sesame seeds.
