Garlic Parmesan Brussels Sprouts

A new side dish to mix things up this week.

INSTRUCTIONS:

Preheat the oven to 350F.

Cut the top off the bulb of garlic and place on a piece of foil with a little olive oil and salt. Close up the garlic in the foil nice and tight then roast in the oven for 40 minutes. Let cool and set aside.

Increase the oven to 400F.

Cut the root end off the brussels sprouts and cut each one in half lengthwise. Zest the lemon using a microplane zester and set aside.

Now in a large mixing bowl, add the cut brussels sprouts, olive oil, roasted garlic (squeeze out the bulbs), lemon zest, grated parmesan cheese, and bread crumbs. Season with salt and pepper and give everything a toss until combined.

Evenly lay out the brussels sprouts on a baking sheet lined with parchment paper and bake in the oven for about 20 minutes or until the Brussels sprouts are roasted and softened.

Serve as a side dish with a steak, chicken, pork, or fish.
