Wash and rinse the russet potatoes. Cut into 1/4 inch round slices. Place on a baking sheet lined with parchment paper. Season with olive oil and Dan-O’s original seasoning then toss until the potatoes are evenly coated. Lay the potatoes out in a single layer then bake in the oven set to 400 degrees Fahrenheit for around 30-40 minutes or until crisp. In a large pan on medium heat, add the bacon and fry until crispy. Break up into little bits and set aside. Dice the tomatoes and chop the green onion thinly. In a cast iron pan layer the cooked potatoes, toppings and cheese. Repeat until all the potatoes are gone. Bake for an additional 5-10 minutes or until the cheese is melted. Garnish with tomatoes, green onion, sour cream, and chives. Enjoy!
