Jalapeno Popper Chicken Wraps

Jalapeno Popper Chicken Wraps: Spicy chicken wrapped in bacon, stuffed with creamy cheese, and jalapeños for a flavorful bite



Jalapeno Popper Chicken Wraps


Preheat the oven to 350F.

Season the chicken breasts on both sides with salt and pepper.

In a 12 inch oven safe pan on medium heat, add 1 tbsp of avocado oil. Once the oil is hot add the chicken breasts.

Let the chicken sear for 3 minutes on one side then give each chicken breast a flip and place the pan in the oven for about 7 minutes or until the chicken is cooked to 165F Internally.

Let the chicken cool for about 10 minutes then cut into small cubes and set aside.

While the chicken is in the oven prep all your ingredients including cooking the bacon till crisp and chopping up the jalapeños. (Make sure to remove the seeds).

Next to a large bowl add the cooked and cubed chicken, diced jalapeños, red onion, green onion, cilantro, chopped bacon, shredded colby jack cheese, garlic powder, chili powder, cumin, lime juice, mayo, sour cream, salt, and pepper.

Give everything a mix till combined then taste it and adjust the seasoning to your liking.

To build the wraps: In a 12 inch dry fry pan on low heat, lay in each wrap one at a time for about 20 seconds per side to heat them up. Add some shredded lettuce to the bottom of the wraps and then 2 scoops of the jalapeño chicken salad. Fold up the wraps like you are folding a burrito then optionally slice the wraps in half before serving.

Repeat the process with the rest of the wraps.
