Preheat the oven to 375F.

Slice the beef sirloin in 1/4 inch thin strips and place in a large bowl. Season with the baking soda, garlic powder, lite soy sauce, Worcestershire sauce, 2 tsp of avocado oil, and black pepper. Give everything a mix till combine and let marinade for 20 minutes.

(NOTE: this velveting process will get the steak super tender).

Next in a 12 inch pan on medium heat, add 1 tbsp of avocado oil and the sliced onion. Season the onion with salt and pepper. After a few minutes or once the onions fry and slightly brown, make a space in the center of the pan and add the steak. Let the steak sear for about 3 minutes then toss into the onions. Turn off the heat and set the pan aside.

Slice each pepper in half and remove the seeds.

In a 9×13 baking dish, add the green pepper halves and add a 1/2 a piece of provolone cheese to the bottom of each pepper. Stuff each pepper with the steak and onions then top with another slice of provolone cheese.

Bake in the oven for 25-30 minutes or until the peppers are soft.

Let cool for 5 minutes before serving.
