Low Carb Salmon A quick and easy low carb weeknight option.



Compound Butter Ingredients:

Instructions: Low Carb Salmon

Preheat the oven to 350F.

In a medium size bowl add all of the compound butter ingredients and mash until evenly combined. 

(NOTE: It helps if the butter is very soft so let it come to room temp).

Next on a baking sheet lined with parchment paper, add the salmon and remove any bones. Season the salmon with salt and pepper then add a nice thin layer of the compound butter on top of the salmon. 

Bake the salmon in the oven for about 12-15 minutes or until cooked to 135-140F internally. 

While the salmon is baking, in a medium size pan on medium heat, add the olive oil and once the oil is hot add in the shallots. Let the shallots fry until they turn translucent then add in the garlic and red pepper flake. After about 30 seconds or once you begin to smell the garlic, add in the tomatoes. Season with salt and pepper. 

After about 2 minutes or once the tomatoes just begin to soften, add in the wine and let reduce by 1/2. Now add in the lemon juice, green onion, and cilantro. Give everything a stir to combine and it’s done. 

Serve the salmon on a large plate and add the sautéed tomatoes and green onion right on top.
