Marry Me chicken

Loaded with fresh basil, sun-dried tomatoes, and a creamy savory sauce. There’s no way to say no to this one.

Cut the chicken into cutlets and season both sides with salt and pepper.

In a large pan on medium/high heat, add a little oil and sear the chicken on both sides. Cook till the chicken is about 80% of the way done then remove the chicken from the pan and set aside. 

Next reduce the heat to medium, add the butter and the shallots to the pan. Sauté till translucent then add the chili flake, oregano, thyme, and garlic. Sauté until fragrant for 1 minute. Next, add the flour and stir into the shallots. Add the stock and bring to a gentle simmer then add the heavy cream and season with a little more salt and pepper. 

Once the sauce is simmering, add the parmesan, sun-dried tomatoes, and basil. Stir all that together before adding the chicken back to the pan. Cover with a lid and continue to cook until the chicken chicken is cooked through. 

Serve with pasta, rice, or mashed potatoes.
