Mediterranean Sardine Pasta

Linguini and clams lovers, I got something for you.

***Serves 2-3




Bring 5 quarts of water to a boil and season the water generously with salt. Boil the spaghetti to the instructions on the package and cook until just al dente. (Make sure to save about 1 cup of pasta water).

While the pasta is boiling: In a large pan on medium heat, add 2 tbsp of olive oil, the shallots, and a little salt and pepper. Once the shallots turn translucent, add the garlic, red chili flakes, capers, and sardines. Sauté for 30 seconds or until the garlic is nice and fragrant then add the wine. Let the wine reduce by half then add the lemon zest, lemon juice, parsley, and basil. Stir until combined then finish with butter. 

Add the cooked spaghetti to the pan with a little pasta water. Toss the pasta until the sauce thickens and coats the pasta.

Serve with crusty bread on the side.
