Mediterranean Style Cod

Mediterranean flavors create a light meal that comes together in 15 minutes.

Pat the cod fish with paper towels until completely dry and remove any bones. Season both sides with salt and set aside.

In a large pan on medium heat, add some olive oil and once the oil is hot add the cod. Sear and cook the cod for about 2 minutes per side or until the fish starts to flake then remove from the pan.

Next in the same pan, add the shallots, red chili flake, and garlic. Sauté for about 1 minute or until you can smell the garlic then add the tomatoes. Season with a little salt and pepper. Once the tomatoes start to soften after about 3 minutes, add the wine and let reduce by half.

Now add the capers, olives, and lemon juice. Give the sauce a taste and adjust the seasoning to your liking then finish with parsley.

Serve the cod on a platter with the sauce over top of the fish.
