No Peek Chicken

A quick and easy week night meal.

Preheat the oven to 350F. Wash and rinse the rice under cold water until the water runs clear. Drain the rice and add to a 9×13 casserole dish. Add the cream of chicken, cream of mushroom, and chicken stock to the casserole dish. Give that all a mix until evenly combined then add the chicken breast on top of the rice and season with the onion soup packet. Sprinkle some parsley on top and cover tightly with foil. Bake in the oven for about 1 hour or until the chicken is cooked to 165F internally. Let cool for 5-10 minutes before serving. Enjoy!
