One Pan Zucchini Parm


Preheat the oven to 400F.

Slice the zucchini into quarter inch slices and prep the rest of the ingredients, then set aside. 

In a 12 inch oven safe fry pan or sauté pan on medium heat, add the olive oil and once the oil is hot add the shallots. Season the shallots with salt and pepper. Once the shallots turn translucent add in the garlic, red pepper flake, and Italian seasoning. Let that fry for 30 seconds or until you begin to smell the garlic, then add in the wine. 

Let the wine reduce by half then add in the heavy cream and parmesan cheese. Give the sauce a stir and let reduce for a few minutes to thicken slightly. Taste the sauce and adjust the seasoning to your liking. Now add the zucchini to the pan overlapping each zucchini slightly. Then add in the fresh basil, parsley, and top with mozzarella cheese. 

Place the pan in the oven and bake for 20 minutes or until the cheese is melted and browned slightly. 

Serve as a side dish.
