Paratha Breakfast Sandwich

Beef bacon and homemade chili oil take this to the next level.

**Serves 2

Paratha Dough Ingredients:

You can buy premade paratha but to make it homemade: to a medium size bowl add the 1/2 cup of flour, 1/4 tsp ghee or oil, 2 Tbsp water, and a pinch of salt. Mix the ingredients until a rough dough has formed then kneed into a dough ball. Place a damp cloth over the dough and let rest for 30 minutes.

Cook the beef bacon until your desired doneness then set aside and prep the rest of your ingredients.

On a clean work surface dusted with a little flour, divide the dough ball into 2 portions. Roll out the doughs into 8 inch circles.

Next in a medium size pan on medium heat with a little bit of oil or ghee coating the bottom, add 1 of the paratha and cook for about 30 seconds or until the top starts to bubble then brush the uncooked side with a little ghee or oil. Give it a flip and cook for an additional 30 seconds then remove from the pan. Repeat the process with the other paratha.

In the same pan that you used to cook the paratha, add a little more ghee then add 1 beaten egg. Swirl the egg around the pan and season with a little salt and pepper. Add the paratha right on top of the egg then give it a flip. Remove from the pan and repeat with the other egg and paratha.

To serve, add the paratha and egg to a plate then add some cotija cheese, beef bacon, avocado slices, green chili, green onion, coriander, and homemade chili oil.

Spritz with a little lime juice if desired.
