Pecorino Sweet Potato Fries

An excellent side dish or appetizer.
Serves 4+





Preheat the oven to 400F.

Combine the dipping sauce ingredients in a small bowl and season to taste with salt then set aside.

Cut the sweet potatoes into wedges and place in a large bowl. Season with olive oil, salt, pepper, garlic powder, Italian seasoning, and grated pecorino cheese. Toss until all the seasonings are evenly covering the sweet potato wedges then lay them evenly on a baking sheet lined with parchment paper.

Bake in the oven for 20 minutes then give each wedge a flip and continue to bake until the are crispy on the outside and soft on the inside. About another 20 minutes.

Finish with more pecorino cheese and garnish with parsley.

Serve with the dipping sauce on the side.
