Instructions: Peruvian Chicken With Jalapeño Green Sauce

Preheat the oven to 375F on convection bake or 400F on normal bake if your oven does not have convection.

In a medium size bowl combine all the chicken seasoning ingredients and mix till combined. Rub the seasoning mix all over the chicken then place the chicken in a roasting pan.

Roast the chicken in the oven for about 1 hour or so rotating the pan every 20-30 minutes until the chicken is cooked to 155-160F internally in the breast and 175-185F internally in the thigh.

Once the chicken is cooked, let rest for 10 minutes before carving.

While the chicken is roasting: In a blender or food processor combine all the jalapeño green sauce ingredients and blend until smooth. Place the sauce in a bowl then taste it and adjust the seasoning to your liking. Store in the fridge until you are ready to serve.

Serve the sauce along with the chicken. (NOTE: I usually like to eat this with rice and a veggie on the side).
