Pretzel Crusted Brownies

A little salty and crunchy, a little sweet and moist…This one hits all the bases.

Preheat the oven to 350 degrees Fahrenheit.

In a large bowl combine butter, sugar, brown sugar, and vanilla. Mix until combined. Next add one egg at a time and mix until incorporated into the batter. In a separate large bowl combine the flour, cocoa powder, and baking soda. Mix until evenly distributed throughout.

(NOTE: if you use unsalted butter add a pinch of salt. If you use regular butter NO salt is needed).

Combine the dry ingredients into the wet ingredients a little at a time and mix until combined. Make sure there is no lumps in the batter. Lastly add chocolate chips and fold into the batter.

For the pretzel crust: blitz some pretzels in a food processor until you have 1 cup when crushed. In a large bowl mix the melted butter and sugar until incorporated. Next add the crushed pretzels and mix until combined.

Into a 8×8 baking pan lined with parchment paper, add the pretzel crust, and spread out evenly and firmly on the bottom of the pan. Bake the crust for 10 minutes (No need to cool). Then, add the brownie batter on top and gently spread out making sure not to move the crust around.

Bake in the oven for about 25 minutes. Test with a knife or toothpick inserting it directly in the center of the brownies. If it comes out clean they are done. Let the brownies cool then you are ready to slice and serve.
