Roasted Garlic Pasta

Garlic butter noodles just got an upgrade.

Serves 2




Preheat the oven to 350F.

Cut the top off the bulb of garlic and place on a piece of foil with a little olive oil and salt. Close up the garlic in the foil nice and tight then roast in the oven for 40 minutes. Let cool and set aside.

Bring 6 quarts of water to a boil and season the water with salt. Boil the pasta to the instructions on the package.

(NOTE: Reserve about 1 cup of pasta water 2 minutes before the pasta is done).

In a large pan on medium heat, add a nice thin layer of olive oil. Once the oil is hot add the onions and season with a little salt and pepper. Once the onions start to turn translucent add the roasted garlic, red chili flake, and lemon zest. Continue to sauté for 30 seconds then add the tomatoes. Cook for about 3-5 minutes and once the tomatoes are soft add the butter and lemon juice. Once the butter is melted into the sauce add the pasta along with a little pasta water.

Give everything a toss to combine and finish with fresh basil, parsley, and parmesan cheese.
