Roasted Red Pepper Pasta

Pair this red pepper sauce with you’re favorite pasta for a fresh weeknight meal.

Serves 2-3




Bring 6 quarts of water to a boil and cook the pasta to the instructions on the package. 

(NOTE: Make sure to season the water with salt and reserve 1 cup of pasta water before draining just incase you need it later for the sauce). 

Next in a blender or food processor add the roasted red peppers, shallot, garlic, oregano, paprika, a little salt, and black pepper. Blend until the sauce is smooth.

Now in a large sauté pan on medium heat, add the olive oil and once the oil is hot add the red pepper sauce. Let the sauce gently simmer for 5-10 minutes then add the heavy cream and parmesan cheese. Stir until combined then let the sauce continue to cook for another 5 minutes before adding the fresh basil and seasoning to taste. 

Next add in the cooked pasta and give everything a toss until combined. If you notice you don’t have enough sauce, add a little bit of pasta water.
