Rotel Dip

Break this out for your next party and watch it disappear.





In a small bowl combine all the southwest seasoning ingredients and set aside.

In a large pan on medium heat, add 1-2 tbsp of olive oil, the diced onions and jalapeños. Season with a little salt and pepper. Once the onions turn translucent, add the ground beef. Brown and break up the ground beef. Season the beef with salt, pepper, and some of the southwest seasoning.

Next add the drained can of diced tomatoes and chilies to the pan along with the velveeta cheese. Turn the heat to low and continuously stir to gently melt the cheese. Once the cheese is completely melted taste and adjust the seasoning to your liking.

Serve the Rotel dip with tortilla chips and garnish with chopped cilantro, diced tomato, and diced jalapeño.
