Smokey Thai Chili Chicken Wings

Smoked wings paired with a sticky sweet and spicy chili sauce.

Serves 4-6





In a medium size sauce pan on medium/low heat, add all the Thai chili sauce ingredients and bring to a gentile simmer. Let reduce for about 15-20 minutes stirring often or until slightly thickened. Let cool and set aside. (NOTE: sauce will thicken more as it cools).

In a large bowl add the chicken wings, avocado oil, garlic powder, onion powder, salt, and pepper. Toss until the seasoning is evenly coating the wings.

Preheat the smoker or charcoal grill to 325-350F. Place the chicken wings on the opposite side of the heat source depending on what smoker you have to indirectly smoke the wings. If you do not have a smoker cook the wings using your desired method.

Cook the wings for about 1-2 hours, turning every 20 minutes until they reach 175F internally. (NOTE: If you want super crispy wings place them in the oven set to 400F on convection bake for about 10 more minutes to crisp them up.

Toss the wings in the Thai chili sauce and finish with green onion, cilantro, and finely sliced fresno chili as garnish.
