Spicy Chinese Popcorn Chicken

Who doesn’t like popcorn chicken?


Chicken Marinade Ingredients:

In a large bowl combine all the chicken marinade ingredients. Mix until combined and let marinade in the fridge for at least 30 minutes. 

In a medium size bowl combine the sauce ingredients. Season with salt and pepper then set aside. 

Next in a Dutch oven or deep frier filled no more then 1/2 way up with vegetable oil, heat the oil to 350F.

In a large bowl combine the rice flour, corn starch, and Chinese 5 spice. 

Dredge the chicken pieces in the flour mixture and deep fry in batches for 4-5 minutes per batch or until nice and golden brown. Drain the pop corn chicken on a wire rack on top of a baking sheet and immediately season the chicken with salt. 

Lastly in a wok or large pan on medium/high heat, add 1-2 Tbsp of vegetable oil. Once the oil is shimmering, add the minced garlic, ginger, and chilies. Fry for 30 seconds or until the garlic is fragrant then add the chicken. (NOTE: Don’t burn the garlic, have the sauce the chicken ready to go). Give the chicken a toss then add the sauce directly to the sides of the wok so it caramelizes slightly. Coat the chicken in the sauce then turn off the heat and finish with finely chopped green onion. 

Optionally serve with white rice on the side.
