Strawberry Salad

A refreshing summer salad. Serve as a side or add grilled chicken and make it a full meal.

Serves 2





In a large bowl add the shallot, honey, dijon mustard, lemon juice, and balsamic vinegar. Next while constantly whisking, slowly add the olive oil until emulsified. Season to taste with salt and pepper then set aside.

Prep the rest of your ingredients and build the salad with spinach and arugula on the bottom of the plate, followed by strawberries, chopped almonds, red onion, and feta cheese.

Now add as much dressing as you like on top and I even like to optionally serve with grilled chicken for a bit of protein.
