A Cinco De Mayo treat.




In a food processor add the avocado, mayo, sour cream, garlic, a handful of cilantro, the juice of 1 lime, salt and pepper. Puree until smooth, taste, and adjust the seasoning. Set aside. Shuck the corn and bring water to a boil in a large pot. Boil the corn for 6 minutes and let cool slightly before sticking a skewer into each piece of corn. Brush each piece of corn with some melted butter then spread a generous amount of avocado crema all over the corn. Cover the corn completely in crumbled cotija cheese then sprinkle some chili powder, smoked paprika, cayenne, lime juice, and cilantro over top. Enjoy!
