Thai Cauliflower Bites

Another side dish as a perfect companion for any of your favorite entrées

INSTRUCTIONS:

Preheat the oven to 400F on convection bake. (NOTE: If you don’t have convection bake that’s okay, they will have to roast a little longer).

In a medium size saucepot on medium/low heat, add all the Thai chili sauce ingredients (except the corn starch slurry) and bring to a gentle simmer. Let reduce for about 10 minutes stirring often or until slightly thickened.

While constantly stirring, add the cornstarch slurry a little at a time until the sauce is thick but not too thick (should coat the back of a spoon). Let cool, and set aside.

Cut the cauliflower into bite size florets and place in a large bowl. Season with avocado oil, garlic powder, onion powder, salt, and pepper. Give them all a toss to combine, then place on a baking sheet lined with parchment paper.

Bake in the oven for about 25 minutes or until soft but still have a little bite.

Toss the roasted cauliflower in some of the sauce then garnish with cilantro and Fresno chili.
