Tomato Basil Chicken

This entree goes great with absolutely anything.

INSTRUCTIONS: Tomato Basil Chicken

Preheat the oven to 350F.

Season your chicken with salt and pepper on both sides.

In a 12 inch pan on medium heat, add a little bit of olive oil and once the oil is hot add the chicken breast. Make sure you press the chicken firmly into the pan to get a nice sear. Let the chicken sear for 3 minutes then flip the chicken and allow it to sear on the other side for 1-2 minutes.

Remove the chicken from the pan and place on a baking sheet. Bake in the oven for about 7 minutes or until the chicken is cooked to 165F internally.

Next while the chicken is in the oven, using the same pan, add a touch more olive oil and your shallots. Season with salt and black pepper. Allow the shallots to fry until they begin to turn translucent then add in the chili flake and minced garlic. Once the garlic is fragrant (after about 30 seconds) add in your tomatoes. Season with a little more salt before adding fresh basil.

Once the tomatoes just begin to soften add white wine and allow to reduce by half.

After the wine is reduced, add in the heavy cream and freshly grated parmesan cheese. Give everything a stir to combine and let the sauce gently simmer until thickened.

Finish with more fresh basil then taste it and adjust the seasoning to your liking.

Serve the sauce overtop of the chicken.
