Truff Pesto Flatbread Pizza

Truffle oil. Balsamic reduction. Homemade pesto. Perfection.



Pesto Ingredients:


In a small sauce pan on medium low heat, add balsamic vinegar and a little sugar. Reduce on low until thickened or until a thin syrup consistency. Let cool and set aside. 

In a food processor combine all the pesto ingredients except the olive oil and begin to blend. Drizzle in the olive oil slowly and continue to blend until emulsified. Season to taste with salt and pepper then set aside. 

Building the flatbread pizza: lay the flatbreads on a wire rack on top of a baking sheet. Start by spreading a generous amount of the pesto on each flatbread. Evenly top with sliced cherry tomatoes, mozzarella cheese, and parmesan cheese. Bake in the oven set to 425 degrees Fahrenheit for 10-15 minutes depending on if you want soft or crispy crust. Once done let cool for a few minutes then drizzle some truffle oil and balsamic glaze on top. 

Slice and finish with chopped parsley, cracked black pepper, and grated parmesan cheese!
