Turnip Pasta

This low carb, fiber rich meal will leave you feeling fueled and refreshed.

Serves 2



Pesto Ingredients:


1st prepare the pesto by combining all the ingredients into a food processor except the parmesan cheese. Blitz everything together until smooth then place in a medium size bowl and fold in the parmesan cheese. Season to taste with salt and pepper then set aside

Next using a spiralizer with the spaghetti attachment, spiralize the turnips and set aside.

In a medium size pan on medium heat, add a little olive oil and the grape tomatoes. Season with a little salt and pepper. After a few minutes or once the tomatoes just begin to soften turn off the heat and set aside.

For the chicken, season with salt and pepper on both sides. You can either grill or pan sear until the chicken is cooked though then rest for 5 minutes and slice. Set Aside and keep warm.

Next In a large pan on medium heat, add 1-2 tbsp of olive oil and the spiralized turnips. Season with a little salt and pepper then let sauté for about 2-3 minutes or until the turnips just begin to soften. Now add some pesto and the sauted tomatoes. Give everything a toss until combined and once the turnips are cooked to your liking, it’s done.

Serve in a bowl with some grilled chicken on top and optionally grate some parmesan cheese on top.
