Twice Baked Potato Skins

Twice baked potatoes make a great side or app for any occasion.




Preheat the oven to 400F.

Cook the bacon until crispy in a pan or in the oven then chop up very fine and set aside.

Next wash, rinse, and dry the potatoes.

Place the potatoes on a baking sheet and season with avocado oil and a little salt all over. Bake in the oven for about 20 minutes or until they are just fork tender. Let cool for 20 minutes or until you can handle them with your hands.

Cut the cooled potatoes in half lengthwise and carefully scoop out the middle of the potato leaving the skin. Place the potato skins back on the baking sheet and set aside.

Place the potatoes that you scooped out into a large bowl and mash up until there are no big chucks. Now add the butter, cream cheese, sour cream, bacon, cheddar cheese, mozzarella cheese, and green onion to the bowl. Give that all a mix until combined then season with salt, pepper, and a little garlic powder to taste.

Fill each potato skin generously with the filling mixture and bake in the oven for another 20-30 minutes or until the cheese is melted, browned on top, and the potatoes are cooked all the way through.

Garnish with finely chopped chives and serve as a side dish or appetizer.
