Watermelon Ice

A quick, refreshing, low cal snack to keep you cool during the hottest month of the year.

Serves 6+

INSTRUCTIONS:

Cut the watermelon in half lengthwise then cut into a checker pattern. This will cut the watermelon into batons and make it easier to grate.

Freeze the batons and once frozen grate with a microplane grater.

Optionally drizzle some honey and lemon juice over the watermelon ice then garnish with mint.
