Watermelon Salad

A refreshing summer salad.

Serves 6




To make the balsamic reduction, in a small saucepan on medium/low heat, add 1/2 cup of balsamic vinegar and 1 Tbsp of sugar. Reduce by 1/2 or until thickened then let cool and set aside.

Cut the watermelon in half lengthwise using a sharp knife. (NOTE: you may need to cut a little bit of the rind off on the opposite end so it will lays flat like a bowl).

Cut into the watermelon fruit in a checker pattern but not all the way though and scoop out the fruit leaving the rind shaped as a bowl.

Cut the fruit into bite size pieces and add to a large bowl along with the cucumber, red onion, and feta cheese. Give it a toss until evenly combined then add the salad to the watermelon bowls.

Finish with a drizzle of the balsamic reduction on top and garnish with mint leaves.
