Zucchini taco boats

Low carb taco boats? Yes please.




First, take your zucchini and cut them in half lengthwise before removing the core, be careful not to remove too much or the walls will not be sturdy.

For the filling: To a pan on medium heat add olive oil. Once hot add onion and garlic. Season with a pinch of salt and cook until slightly translucent. Then, add the garlic. Cook until fragrant for about one minute before adding ground beef. Season with salt, black pepper and taco seasoning. Once the ground beef is browned, add diced tomatoes, tomato sauce, and black beans. Mix and allow to simmer for 10 minutes.

Place your zucchinis into a casserole dish or on a parchment lined baking sheet, and add beef filling to each. Top with shredded cheese, and bake in the oven on 400 degrees fahrenheit for 30 minutes. Once the zucchini is soft, remove from the oven. Garnish with fresh cilantro and serve!
